Recipes...as promised.

Carmelized Chicken with Cranberry Conserve
3 tbsp frozen orange juice concentrate
3 tbsp balsamic vinegar
1 garlic clove minced
4 skinned and boned chicken breast (i used boneless)
3 tbsp brown sugar
1 tbsp dark sesame oil
1 small onion chopped
1/2 c. dried cranberries
2 tbsp sesame seeds (toasted)
Combine first 4 ingredients in zip lock bag; add chicken. Seal chicken and and chill at least
1 hour. Remove chicken from marinade, reserving marinade.
Cook sugar and sesame oil in a large non stick skillet over medium-high heat, stirring constantly 4 minutes. Add chicken and cook 3 to 4 minutes on each side. Add reserved marinade & Cranberries cook stirring and turning chicken often ( 10 minutes or until done). Slice and serve with Cranberry mixture. Garnish with toasted Sesame seeds and chopped green onions if desired.
I served it with rice pilaf and and a veggie!
* i doubled the OJ, balsamic, Brown sugar, garlic and sesame oil. I used 7 chicken breast (since I cook enough for Steven to take to work)
*Alie-Grace ate 2 servings of it!
